How to cook Pinakbet?

This Filipino dish has been past from generations to generations. Pakbet or Pinakbet is made from mixed vegetables with either steamed fish, shrimp paste or even with chopped sausage.

This was first cooked from the Northern regions of the Philippines, particularly in Iloilo. This dish is very easy to cook and you can even get the vegetables you needed on your backyard if you have a little farm.

Ingredients:

• 1 cup squash, slice in cubes
• Half bundle of String beans
• 4 cloves of garlic, minced
• 1 onion, sliced
• 3 pieces of skinless longganisa or chorizo, choped
• 1 eggplant, sliced
• 2 ½ tbps of cooking oil
• Pinch of salt
• ½ cup pork, sliced
• ½ water
• ½ cup soy sause
• 1 tsp brown sugar

Preparation:

Preheat pan for a minute, then add cooking oil. Sauté garlic and onion then add a pinch of salt. Once onion caramelizes, add your pork and skinless longganisa or chorizo. Cover pan for about 3-5 minutes, when pork turns light brown, add water and bring to boil. You can then add squash, string beans, eggplant, soy sauce and brown sugar. Cover pan again and wait for 8-10 minutes or until vegetables are cooked. Steam for another 5 minutes or until liquid is absorbed and it is ready to serve.

Tips:

You can also add bitter melon for your vegetables and shrimp paste instead of chorizo or skinless longganisa. If you want to use shrimp paste, no need to add salt because shrimp paste is already salty.
